High-Protein Puff Pastry Tarts

Golden, flaky puff pastry tarts with a creamy high-protein filling — simple enough for a weekday breakfast, pretty enough for brunch.

Ingredients

  • 1 sheet puff pastry, thawed
  • 1 cup cottage cheese
  • 1/2 cup Greek yogurt, plain
  • 1 egg, for egg wash
  • 2 tbsp honey (or swap for everything bagel seasoning for a savory version)
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

 

  • Fresh fruit or herbs, for topping

Instructions

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Roll out the puff pastry and cut into 6 rectangles. Score a border about 1/2 inch from the edge of each, without cutting all the way through.
  • Blend the cottage cheese, Greek yogurt, honey, vanilla, and salt until smooth.
  • Spread the filling inside the scored border of each pastry rectangle.
  • Brush the borders with egg wash.
  • Bake 15–18 minutes, until puffed and golden brown.

 

  • Top with fresh fruit or herbs before serving.

Notes

For a savory version, skip the honey and vanilla, and top with everything bagel seasoning and chives instead.
