Step 1: Prepare the Bread Bowl
- Preheat your oven to 375°F (190°C).
- Using a sharp knife, cut a circle around the top of the bread loaf and carefully hollow it out, leaving about an inch of bread on the sides and bottom to keep it sturdy.
- Cut the removed bread into cubes — you’ll use these for dipping.
- Brush the outside of the bread bowl with melted butter and lightly dust with smoked paprika to give it that warm pumpkin-orange color. If you want a more decorative touch, you can carve small ridges into the sides of the loaf with a knife to mimic a pumpkin shape, and add a small piece of bread or a breadstick on top as the “stem.”
Step 2: Cook the Spinach and Aromatics
- Heat olive oil in a pan over medium heat.
- Add chopped onion and garlic, sauté for 2-3 minutes until fragrant.
- Add the spinach and cook until wilted (fresh spinach) or heated through (frozen spinach). If using frozen spinach, squeeze out excess water thoroughly before adding.
Step 3: Make the Dip Mixture
- In a large bowl, mix the Greek yogurt, cream cheese, mozzarella, and parmesan until smooth.
- Fold in the cooked spinach, onion, garlic, and artichoke hearts (if using).
- Season with salt, pepper, and chili flakes.
Step 4: Bake
- Pour the spinach dip mixture into the hollowed bread bowl.
- Place the filled bread bowl on a baking tray lined with parchment paper.
- Bake for 20-25 minutes, or until the top is golden and bubbly.
- Arrange the reserved bread cubes around the bowl for the last 8-10 minutes of baking so they toast up.
Step 5: Serve
Serve immediately while warm, with the toasted bread cubes, crackers, or fresh vegetable sticks (carrots, celery, bell peppers) for dipping.
