High-Protein Apple Cider Muffins

Soft, spiced muffins packed with real apple cider flavor and a protein boost — the fall baked good that doesn’t leave you crashing an hour later.

For the muffins:

  • 1 1/2 cups apple cider, reduced to 1/2 cup
  • 1 3/4 cups all-purpose flour
  • 1/2 cup vanilla protein powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup plain Greek yogurt
  • 1/3 cup melted butter
  • 2 eggs
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract

For the topping:

 

  • 3 tbsp melted butter
  • 1/3 cup granulated sugar
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 375°F (190°C) and line a muffin tin with liners.
  • Simmer the apple cider in a small saucepan until reduced to about 1/2 cup, then let it cool slightly.
  • Whisk together the flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
  • In a separate bowl, whisk the reduced cider, Greek yogurt, melted butter, eggs, brown sugar, and vanilla until smooth.
  • Fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  • Divide the batter evenly among the muffin cups and bake 18–20 minutes, until a toothpick comes out clean.

 

  • While the muffins are still warm, dip the tops in melted butter, then roll in the cinnamon-sugar mixture.

Notes

Reducing the cider is what gives these their strong apple flavor — don’t skip that step. For a dairy-free version, swap the Greek yogurt for coconut yogurt.
